
Cauliflower as a pizza crust?! Don’t knock it till you try it . I attempted this dish as I’ve been trying to limit the amount of carbs I eat. I realized things like pizza crust and sandwich bread can make me feel bogged down and I’ve been looking for alternatives that still taste yummy but help me maintain my energy. Well this was definitely a WINNER!
And although it’s not as stiff as a regular pizza crust (I eat my cauliflower pizza with a fork to make it easier), it gets a nice crisp and I honestly love the flavor.
Here’s the recipe :
2 Cups Riced Cauliflower 1-1/3 Cup Shredded Mozzarella Cheese, Divided 1/4 Cup Grated Parmesan 1 Egg 1/2 tsp Italian Seasoning 1/3 cup Pizza Sauce Pepperoni's
Instructions: 1. Preheat oven to 425 F 2. Place riced cauliflower in microwave for 10 minutes, stirring halfway through. Let cool and then mix in 1/3 cup mozzarella, parmesan, egg, Italian seasoning and salt 3. Form cauliflower mixture into a circle, about 1/4 inch thick, onto a parchment lined baking sheet 4. Bake until edges are browned, about 20 minutes 5. Top crust with pizza sauce, remaining mozzarella and pepperoni slices 6. Bake until cheese is melted, about 7 to 10 minutes
(Serves 2 - sometimes I double the recipe so I have extras for meal prep)
